I have found my favorite easter egg in all of the Assassin’s Creed series.

In Sleepy Hollow, there is a graveyard next to a viewpoint that is on top of a church. 

In that graveyard, there is a pumpkin that sits on top of one of the gravestones.

 If you look at it with eagle vision, it glows orange, but none of the other pumpkins in the town glow when you look at them with eagle vision.

If you wait until night and approach the church (note: you have to wait until there is no one in front of the church), you should see something odd in the graveyard that wasn’t there before. I was actually trying to escape combat when I made the mistake of running into the graveyard.
