In the Blaze the Cat-focused entry of Sonic Comic (a series of one-shot comics released on Sonic Channel in 2016 as part of the series’ 25th anniversary celebration), Amy is shown to be strongly infatuated with Blaze.
Also, in Sonic Boom S2E45 “Three Minutes Or Less”, When seeing that Amy has set up a date, Sonic goes through three people she could be having a date with, two of them men and one of them a woman. Amy being on a date with a woman isn’t seen as different or strange, and just as plausible as the previously mentioned men.
