Well, regina kept her name, charmings name before taking the place of Prince James was david which is his SB name, snow used the alias margret before switching it to mary when she first met red, Rumplestilskin was called Mr Gold because he spun straw into gold and almost everyone elses names are just synonyms for the names like red/ruby cricket/hopper etc
