Ruby refers to Sapphire as “she” and since they are romantically involved, I trust Ruby would talk about Sapphire in her preferred pronouns.
So, at the very least, one of the garnet ship is female.
And if Jasper was running from the direction ruby came from after yelling “where is she” meaning while yes, they are sexless, both Ruby AND Sapphire identify as female.
So YES it IS a lesbian couple.
