Well, maybe he doesn’t die per say, he just retreats into his gem when he gets too old and then is reborn again, younger and looking different and without memories.

The doctor doesn’t regenerate into a newborn. And he still has his memories. this is litterally steven being reborn into a new person who will have their own life from infancy and such. Kind of like the avatar.
