Gravity was defined a long time ago, too.

Doesn’t make it wrong.

In 1687, Newton published his Law of Universal Gravitation, building upon work of previous centuries. It describes gravity as an attractive force between two bodies, proportional to their masses and the inverse-square of the distance between them.

In 1903, while broadly accepted, it was known to be at least partly incorrect, failing, for example, to accurately describe the orbit of Mercury.

In 1915, Newton’s law was superseded by Einstein’s Theory of General Relativity, describing how gravity arises from the curvature of spacetime.

Since then, it has been realised that general relativity cannot be reconciled with quantum mechanics, and now many physicists are attempting to develop a theory of quantum gravity than can.

The point is never that things “defined a long time ago” are wrong, but that nevertheless science progresses and understanding improves. (Or at least that’s the aim.)
