AFAIK the church was almost certainly built to have acoustics like that.
Architects and builders would have known what arches, domes and other reflective surfaces would do to sound, choirmasters would have known how to fine-tune the effect with fabric hangings, and performers would have adjusted the pace of their performance to take the reverb-delay into account.
