The Pokemon universe has a version of Carcinisation except instead of creatures evolving into crabs they evolve into electric rodents. Something in the Pokemon universe saw Pikachu and was like "this is what peak performance looks like"

Technically mimikyu isn't an electric rodent, being a ghost/fairy type who hides their true form, but mimikyu did choose a disguise that makes them appear like this evolutionary line; pikachu in particular. I'd say it's like the coral snake and king snake evolutionary mimiking (black on yellow kill a fellow, red on black poison lack) but it's more like if a raccoon saw a dog getting belly rubs and walked up to the petter wearing hand-made floppy dog ears and a sign that says "hello I'm lovable too"
