The way some Star Wars writers handle Mandalorian-Jedi relations is so funny because you watch the Clone Wars and The Mandalorian and all the Mandalorians are all "the Jedi are our ancient enemy. We hate them. If you see one you should definitely throw down immediately."

Then you go to the Knights of The Old Republic games that litterally invented the Mandalorian Jedi conflict and 90% of the Mandalorians you meet are like "holy shit a Jedi! Huge fan of your work! Getting my ass kicked by your kind was the highlight of my career!"
